Few foods say summer like a fresh, juicy peach. If you'd like to take that taste to your dessert plate, check out these two easy peach recipes using fresh peaches, courtesy of employees at Franciscan Health Mooresville.
Franciscan Health Mooresville's annual tradition of competing in the Morgan County Fair's annual Chopped competition continued this year, with two employee teams joining the fast-paced cooking competition.
As part of the challenge, the two teams created a quick dessert using fresh peaches. Our teams have shared their recipes below.
Place pie crust dough into a 9x9 pan and baked until golden brown (according to pie crust recipe or package directions.)
Place the peach and cherry jam and fresh peaches in a pan on low heat to cook until juice is reduced and peaches are soft.
Optional: Add honey at the end for sweetness.
Spoon the mixture over the crust. Serve warm.

Fresh Peach Whip:
Hand-whip together cream cheese and 1/4 cup sugar. Fold in peaches or fresh apple.
Homemade Cinnamon Chips:
Preheat oven to 350 degrees.
Mix together 2/3 cup sugar and the cinnamon. Set aside.
Spread oil or butter lightly on tortillas.
Bake in a 350 degree oven for 15 minutes, flipping over several times to assure browning.
After removing from oven, sprinkle tortillas with sugar and cinnamon mixture.
Cut each shell into 6 pie-shaped pieces.
Serve cinnamon chips with fresh peach whip and enjoy.
