Franciscan Fryers Square Off in Chopped Challenge
MARTINSVILLE, Indiana - The Franciscan Fryers squared off Saturday at the Morgan County Fair's Chopped Challenge, and you can try their signature dish.
Franciscan Health Mooresville's staff members Peggy Eineman, Food & Nutrition Services; Ginny West, Medical Staff Office; and Kim Stecher, Administration; represented the hospital at the Chopped Challenge. The team had 45 minutes to prepare dishes from a mix of ingredients brought from home and from a surprise basket that included a mystery protein.
The Fryers have shared the recipe for their signature dish, spaghetti bolognaise, for you to enjoy at home. Take advantage of the fresh herbs available at farmers markets and a long afternoon to enjoy this dish.

- ¼ cup olive oil
- 8 minced garlic cloves
- 1 medium onion, diced
- 8 ounces lean ground beef
- 12 ounces Italian sausage
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 2 teaspoons crushed red pepper flakes
- 2 28-ounce cans tomato sauce
- 2 28-ounce cans crushed tomatoes
- ½ cup sugar
- Salt & pepper to taste
- 3 ounces butter
- 3 tablespoons fresh chopped basil
In heavy pan lightly sauté garlic and onions in olive oil.
Add sausage and beef; brown for 8 minutes.
Add tomato products and sugar, and simmer for 2 hours.
10 minutes prior to service add salt, pepper, butter and basil.
Serve over cooked spaghetti.
