Fresh From The Garden: Franciscan Health, Purdue Extension And Duneland Health Council Partner On Healthy Cooking Classes
MICHIGAN CITY, Indiana - Residents of the Michigan City's Eastport neighborhood enjoyed the first tasty lesson in a series of healthy cooking classes using ingredients grown in the Walker Park Community Garden.
The inaugural class on June 20, 2019, was taught at the garden by Chef Erik Tannehill, who demonstrated the preparation of pesto veggie pasta with chicken (see full recipe below). The demonstration used a new mobile kitchen facility purchased by the Franciscan Health Foundation with a $5,000 grant from the Duneland Health Council.
The cooking class is an outgrowth of the Walker Park Community Garden that is a joint effort of Franciscan Health Michigan City and Purdue Extension, and is also funded by a community development block grant through Michigan City. Land for the 24-bed garden, which includes 12 U-pick beds for residents, along with individual family beds, is donated by the Michigan City Parks and Recreation Department.
Sister Petra Nielsen, Vice President of Mission Integration for Franciscan Health Michigan City, said food insecurity was identified as a community need, prompting involvement in the creation of the garden last year. To help residents learn how to plant and care for the garden, Franciscan helped to fund the master gardener position. "As an extension of this community garden project, we're working with Purdue Extension to educate the residents on how to use the foods in the garden to make healthy and tasty recipes for their families," she said.
Chef Tannehill's focus in the first class was on using fresh herbs. He plucked basil and lemon balm from the garden to use in a pesto sauce, which he tossed with fresh vegetables, chicken and tortellini. After sampling the finished dish, participants took home a copy of the recipe, an Aldi gift card and a shopping list of ingredients to supplement those from the garden. This pilot program will continue with four more sessions, each highlighting an ingredient from the garden.
Jamie Clark, whose family has a plot in the garden, thought the cooking class was a great opportunity "to get everybody together to trade ideas. We just traded some information about swapping seeds for different varieties of tomatoes."
Caroline Arnett, community wellness coordinator with Purdue Extension, said she thought the first class "went really well" and was optimistic that the pilot program could be expanded to a wider audience in the future. "We're really focusing this year on education, not just the nutrition part like cooking, but having a master gardener, so really helping to provide a skill set that we all need," she said.
Arnett said resident participation in the garden has tripled from last year. The garden now includes a “lead bed” with fruits and vegetables that help combat lead poisoning. Signage is also being put up to let area residents know what is ready to pick.
In the future, Sister Petra said Franciscan hopes to partner with other organizations to provide the mobile kitchen for other educational programs with a focus on healthy eating. The mobile kitchen includes cooking and food prep surfaces, oven, refrigerator and portable sink, and can be run using a generator or A/C power.
Duneland Health Council Executive Director Camie White said her agency is honored to provide the funding for the mobile kitchen. "We join the Franciscan Alliance in the belief that healthy food preparation and healthy eating provide a strong foundation for a healthier and happier community," she said.
Fresh Basil Pesto
- Prep time: 15 minutes
- Yield: Makes 1 cup
Basil pesto darkens when exposed to air, so to store, cover tightly with plastic wrap making sure the plastic is touching the top of the pesto and not allowing the pesto to have contact with air.
The pesto will stay greener longer that way.
- 2 cups fresh basil leaves, packed (can sub half the basil leaves with baby spinach)
- 1/4 cup fresh lemon balm
- 1/2 cup freshly grated Romano or Parmesan-Reggiano cheese (about 2 ounces)
- 1/2 cup extra virgin olive oil
- 1/3 cup sunflower seeds (can any kind of nut product)
- 3 garlic cloves, minced (about 3 teaspoons)
- 1/4 teaspoon salt, more to taste
- 1/8 teaspoon freshly ground black pepper, more to taste
- Pulse basil and sunflower seeds in a food processor or blender:
- Place the basil leaves, lemon balm and sunflower seeds into the bowl of a food processor and pulse a several times.
- Stream in the olive oil: While the food processor is running, slowly add the olive oil in a steady small stream. Adding the olive oil slowly, while the processor is running, will help it emulsify and help keep the olive oil from separating. Occasionally stop to scrape down the sides of the food processor.
- Stir in salt and freshly ground black pepper, add more to taste.
- Toss with pasta for a quick sauce, dollop over baked potatoes, or spread onto crackers or toasted slices of bread.
Roasted Chicken Breast And Brussels Sprouts
- Preheat oven to 350 degrees.
- Take 1 lb. boneless skinless chicken Breast on and place in an oven safe pan. Drizzle generously with olive oil, season with salt and pepper, to your taste.
- Cut 8 oz. brussels sprouts in half and add to pan with chicken. Drizzle with oil, season with salt and pepper to your taste.
- Roast in oven for about 15-18 minutes, until chicken is completely cooked (165 degrees).
- Pull and cool to room temperature.
- Chop chicken into bite size pieces.
Finish the meal
- Cook Tortellini in lightly salted water, per package directions
- Cut grape tomatoes in half and slice mushrooms and set aside.
- Drain pasta and rinse in cool water to stop cooking process.
- Heat your favorite sautee pan on medium, with 2 times around the pan with olive oil.
- Add chicken and mushroom and toss around. Place a teaspoon of chopped garlic pinch of salt and pepper, along with Brussels Sprouts.
- Toss until mushrooms start to slightly soften. Add pasta and pesto, then toss gently and well.
- Place in 4 pasta bowls and top with parmesan reggiano cheese. Serve with your favorite bread.
