Ingredients

  • 2 pounds tomatoes, quartered
  • 1 cup, chopped green bell peppers
  • 1/2 cup, chopped shallots
  • 1/4 cup whole almonds
  • 2 tablespoons sherry vinegar
  • 1/4 teaspoon salt

Directions

  1. Combine all the ingredients in a blender or food processor.
  2. Puree until you reach desired chunkiness.
  3. Chill 1 hour before serving.
